i think iptv is not comes under nto or trai rule as of now so we can't say anything surely right now 🤔
IPTV does come under the TRAI NTO, it applies to all forms of linear TV delivery platforms including Cable, DTH, HITS, or IPTV. Only the live channels included in the broadcasters own OTT apps are exempt from the regulation, which is a loophole that Jio had been exploiting since quite some time.

Star and Sony stops live channels on its apps, can other broadcasters like Zee etc will follow after Jio’s iptv?

I think Jio might stop live channels from Jio tv+ app after iptv commercial launch.
I guess FTA channels will remain and paid channels would be according to IPTV , in that case they can have packs as DTH do with NCF too for FTA channels plus paid channels. At present there is no distinction as such specifically for paid channels in Jio TV + fiber. Also there are 3 times more FTA channels on Jio TV+ Fiber which are not there on Hathway I guess.

Is DTH faster than IPTV in terms of reception?
I guess no as signals are received via satellite and should be fractionally slower than IPTV but I guess some are internet channels only which would definitely be faster and now like Sony's digital feed for IPTV would be completely different from satellite's Sony feed.
