If I enable any third-party keyboard like Grammarly and Emoji Keyboard on MIUI. I get this pop up of the keyboard app not starting after the reboot.

Will I be apply password to unlock the device after switching it on?

It's says after you reboot or restart your phone, and the app works only after you unlock your screen (yess after you enter your password.)

If keyboard doesn't start. How would I be able to type password?

If you disable all other keyboards except just the third party one then yes it can result in locking out situation. Options after that are put the password through a physical keyboard connected or reset device.
