Not anymore. Very few options in veg. Apart from South Indian and some odd Punjabi dishes. Veg food is pretty much skippable.
I partially agree with your view about availability of fewer veg options now after pandemic in nearby restaurants or hotels as some of cooks might have migrated or gone back to their native places due to which some hotels or restaurants have shut down in some locations . the present cooks are stressed to make different dishes in less time - which they have not much experience in - due to which they end up making it more spicier or oily which doesn't give taste as earlier and different dishes are limited to specific specialty restaurants even (most of them are not making it properly ) can cite similar reasons even in non veg restaurants who are making it few dishes that too oily and more masala , deep friend . compared to pre pandemic when they made it variety of dishes and different dishes had uniqueness now its limited to few dishes which they able to make quickly. they just use ready to eat ingredients or spices which makes it feel like skippable.

In few places they still give different veg dishes which you would not feel like skipping even during pandemic - sadly they are under-rated. only some selected established hotels/ restaurants continue their standards.

the way the people make in the hotels & restaurants even most devote nonveg followers would feel to skip even the non veg dishes . hotel industry should try to focus on making dishes authentically as near as possible and not just focusing on cost cutting & listening to customers feedback to some extent .
