I checked in my home theater and only stereo sound is coming on Apple TV 4k but I am getting Dolby 5.1 on fire stick 4k and also there is no mention of 5.1 on Apple TV unlike fire stick

I am not sure may be you need to update you IOS on Apple TV.

I personally feel the Dolby audio quality not quite good. I think this is because of their poor bit rate. I am hoping that they will improve very soon.

Update the app on apple tv, you will get 5.1 audio, now latest version is 6.2
