Open the Google app > Tap on the "More" icon bottom right of the screen > Settings > Under the Google Assistant subheading tap on Settings > Phone > then switch the Google Assistant off.

If that doesn't works Go to Permissions, Choose Display Pop-Up window and Disable that Permission for Google Apps. It can be seen in this video.

Display is super AMOLED, but not finding Always on Display option in settings.

Samsung has improved it further on S10 series. Now we can disable AOD and use tap to wake up too. Its a standalone setting. If you double tap with AOD disabled then lock screen will show.
